Your Neighborhood Cupcake Place

It’s Halloween, the spookiest time of the year, and nothing is scarier than running out of your favorite treats! Thankfully, we’ve partnered up with Cupcakery to keep you out of your trick-or-treat candy. And what’s a more terrifying treat than cupcakes? Even more cupcakes! Their menu of 19 custom cupcakes is continually growing, as they add seasonal decorations and new recipes. There’s a new cupcake out every month, so you’ll never get tired of their flavors! For October, they have a caramel apple cupcake, which will have you craving more.

Cupcakery also has custom flavors that you can build yourself and full-sized cakes for any occasion. But who is the one who thought up these desserts? It was actually three women who together founded Cupcakery in 2005, and one of them is the current owner and operator. Who is this countess of cupcakes? Why the princess of pastries, Pamela Jenkins! Pamela, who was born and raised in Jacksboro, Texas, studied across the globe. When Pamela is not spending time creating new cupcake recipes, she spends time with her three dogs, riding horses and doing Bikram Yoga.

And while Cupcakery is a sugar addict’s oasis, it also uses real ingredients.

 “All our cakes are made with the finest and freshest ingredients and are baked on premises. Our frostings are made with 100 percent fresh butter, 100 percent fresh cream cheese and zero shortening,” she says.

So don’t be scared! Come by one of Cupcakery’s two locations in Summerlin or by Eastern.

Mimi’s Pumpkin Bread Cupcakes

Ingredients

2 cups pumpkin (fresh and pureed or canned)

1/2 cup pecans

3 cups sugar

1 cup vegetable oil

3/4 cup water

4 eggs

3 1/2 cups flour

2 teaspoons baking soda

2 teaspoons cinnamon

1 teaspoon nutmeg

3 1/2 teaspoons cloves

Directions

Combine all ingredients in a bowl. Mix well. Pour into greased pan of choice. Bake at 350 degrees for 1 hour or until center springs back at light touch. If baking in a coffee can or cupcakes, fill half way.  Adjust times for muffins and loaves.
